Curried Cous Cous Salad Recipe

1 cup cous cous

1 med tomato, diced

½ cup green onion

⅓ cup dried currants

1 tbsp curry powder

½ tbsp cumin

¼ tsp sea salt

¼ cup Roasted Lentils by Simple Supple Foods (Mediterranean)

Directions:

  • Bring 1 cup water to a boil, add cous cous, cover and remove from heat.  Let stand for 5 minutes and fluff with a fork

  • Add cous cous into a large bowl with the rest of the ingredients, season and mix well

  • Top with additional Roasted Lentils and green onions if desired
